In the fine scale, when you think of freezing from the chemistry
perspective, things start to look very different below 0 ° C.
Freezing transforms liquid water into crystalline ice that pulls out
of solution liquid water molecules.
This increases the effective concentration of anything that is
dissolved in the liquid phase, and you cannot simply go up to any
arbitrary level with osmotic concentrations in tissues.
